Fredsted x Frederikshoj – Full House Concept

Fredsted Studio was commissioned to lead the complete transformation of the 2-star Michelin restaurant Frederikshoj in Aarhus, Denmark. In close collaboration with chef Wassim Hallal, we developed and executed a full-house concept that reimagines the guest experience from arrival to final impression. From the outset, the ambition was clear: to elevate not just the interior, but the entire atmosphere of the house, bridging architecture, branding, and materiality into a new chapter strong enough to position both Frederikshoj and Aarhus on a global stage. The goal was not a redesign – but a redefinition.

With trust and freedom from Hallal, we were invited to challenge every detail of the spatial experience. While the cuisine and service already operate at a world-class level, the brief was to match that standard in every other aspect of the guest journey through lighting, sound, materials, and spatial identity. Crafted in just over 90 days, the renovation features bespoke furniture, rich walnut, travertine that flows seamlessly from exterior to interior, and tactile leather-clad surfaces. Each material was selected to reflect the raw beauty of nature surrounding the site – forest, sea, and sky and to resonate with the rhythm and techniques of the kitchen.

The layout was fully redefined to create clarity, calm, and functional flow. The wine cellar was relocated. A powerful open kitchen now allows guests to witness the precision of plating. Every zone is choreographed through curated lighting, subtle wayfinding, and custom-built surfaces tailored to support focus, presence, and atmosphere. This project represents more than aesthetic ambition. It reflects a mutual respect between visionaries. As one of our most intense and personal collaborations to date, we’re proud to have worked closely with chef Hallal and the team at Frederikshoj to create a holistic, high-performance environment grounded in craftsmanship, clarity, and international presence.
